We had a beautiful rare warm weekend at the cottage this past weekend. The water was calm, there was no wind, we could eat outside! It felt like another part of the world. It was glorious! Saturday started out with breakfast on the deck- fresh strawberries from Codiac Organics in Moncton were included ( I also got some of my salad fixings for the weekend from them!). This started my inspiration for trying out some strawberry recipes this weekend while they were fresh.
We then got out and enjoyed part of Shepody River Day in Riverside-Albert. They had historical displays and free strawberry shortcake in the morning at the Rec Centre. We met some people we knew and were welcomed by long time resident and founder of Shepody Days- Beulah Morrissey. She was just a delight. She told us a bit about herself and what she does in the community. She is quite the little artist too- she is the one who painted the murals on the old community hall you see as you are driving through town. She gave me a booklet on some of the history of Riverside-Albert. I just love seeing the old pictures and hearing the old stories. Rainbow Seeds from Riverside-Albert provided the strawberries and Elaine Holmstrom from the Peck Colonial House provided the biscuits.
Shepody Days was started in 2011 by Beulah and her daughter to invoke some community spirit between the weekends of Alma’s Celebration Days and Hillsborough’s Homecoming Days. The events change from year to year but what seems to stay constant are the kayak races and the fireworks. We went over beside the Riverside School and saw the races start in the afternoon. Beulah and another lady were the marshalls for the race.They were so cute. We loved seeing the community spirit and participation by everyone there. We ended up picking up a quart of strawberries from Rainbow Seeds to add to my recipes as well. I felt so bad for the owner Eliza- she worked so hard to get me that quart of berries. Thank you so much Eliza! (Side note- We had planted about 50 strawberry plants from Rainbow Seeds on our property around 3 years ago but they aren’t doing that well this year- maybe too dry , maybe neglect, maybe late frost or the plants just getting too old but I will get a couple quarts eventually I think. Our ground seems to be great for growing them , they just need a caretaker who is there to tend them more often. 🙂 )
The following 3 recipes come from Greta Podleski’s newest cookbook Yum and Yummer that came out this past year. ( You will know her from the sister duo that started the LooneySpoon collection of cookbooks). I’ve tried a few of the recipes and thought I would try some involving strawberries. This one we had for lunch- it is the Sensational Spinach Salad-with chicken, strawberries and avocado. It was delicious!
This one we had with our supper. I have made it a few times already this spring and summer. It is best eaten the same day – kind of goes mushy and juicy so I usually just make enough servings for whoever is eating. Greta calls it a Strawberry and Watermelon Salad with feta, mint and honey-lime dressing. Very refreshing and nice to go with some barbecued meat on a hot night.
This next photo is breakfast on Sunday- just some French toast with more berries and icing sugar. Simple and tasty with maple syrup of course!!
This last recipe is also from Yum and Yummer- it was featured with blueberries but it said to try it with fresh strawberries so I did. It is her Lemon- Blueberry (Strawberry) Cheesecake Parfaits. We had these for our dessert after lunch. What a refreshing berry taste!
